Thyroid Detox Soup

April “souped off” a size and healed her thyroid. She participated in my July Watercress Soup Diet where she lost 7 lb. and a whole size. This is the theme of the cover story for Woman’s World magazine this week. April was diagnosed with borderline hypothyroid. She believes the watercress soup diet program helped her thyroid. She gained energy and was able to work out like she hadn’t been able to before. This diet helped her when nothing else had helped her lose weight.

Everyone’s thyroid needs help these days. We all need to detox our thyroid gland from the halogens we meet day in and day out. Iodine is part of what’s called the halogen family that includes fluorine, chlorine, and bromine. Chlorine can be found in drinking water, swimming pool and jacuzzi treatments. Fluorine is found in mining and processing of phosphate rock, agricultural fertilizer, the manufacture of aluminum, the combustion of coal (containing fluoride impurities), and the manufacturing of steel, copper, nickel, glass, brick, ceramic, glues and adhesives. In addition, it is used in fluoride-containing pesticides, drinking water, toothpaste, and dental treatments. Bromine is found in pesticides, plastics (used to make computer), breads, bakery goods, soda, medications, fire retardants, and bromine-based hot tub and swimming pool treatments.

The thyroid needs plenty of iodine to be healthy. Iodine and tyrosine are building blocks of thyroid hormones. When we have higher concentrations of any of these three halogens that are similar in chemical structure to iodine, they will displace iodine and get stored in the thyroid.

Here’s what you can do. Increase your iodine consumption. Eat more seaweed and fish. Watercress is one of the best sources of iodine. If your thyroid has plenty of iodine, it will be much less likely to replace it with one of the other halogens. This is where the Thyroid Detox Soup is so beneficial because it’s made with watercress. This is the topic of the Woman’s World article this week.

Today’s Recipe

Watercress Detox Soup

Serves 4

  • 2 tablespoons coconut oil
  • 1 cup sweet onion, diced
  • 1 cup celery, diced
  • 1 cup carrots, diced
  • 1 cup sliced mushrooms
  • 1 teaspoon Celtic sea salt, or to taste
  • 4 medium zucchini, diced
  • 4 cups vegetable broth
  • 1/4 cup unsweetened almond butter
  • 2 cups watercress, chopped
  • 2 teaspoons fresh lemon juice
  • Freshly ground pepper to taste

In a  medium to large soup pot over medium heat, heat the oil and sauté the onion and celery with half of the salt for about 5 minutes, or until translucent. Add the zucchini and sauté for 3 minutes.

Add the vegetable broth and the other 1/2 teaspoon salt. Stir in the almond butter until well combined. Increase the heat to high, and bring to a boil. Reduce the heat to low, and simmer for about 5 minutes or until the zucchini is tender. Add the watercress and simmer for about 5 minutes. Turn off the heat, and cool the soup slightly. Stir in the lemon juice.

If you want a creamy soup, pour it into a blender in batches and puree until smooth and creamy. Return the soup to the soup pot, season to taste, and warm over low heat.
